Sweet & Sour Pork Chops Recipe

Pork – the other white meat.  I don’t tend to buy a lot of pork because I just run out of ideas of what to make with it.  Here is a simple recipe that your family will love.  Lean boneless pork is a great source of protein and has lots of vitamins.  It is an ideal meat for kids since you don’t need to worry about bones or a lot of fat.  The tender cut is easy for kids to cut too.  How many times do you need to put your fork down during a meal to help your kids cut their meat?

Sweet & Sour Pork Chops

Ingredients:

  • 1/2 cup sweet & sour sauce
  • 2 Tbsp. Chili Sauce
  • 1/4 tsp. ground ginger
  • 4 boneless pork loin chops
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Directions:

  1. preheat your grill
  2. mix sweet & sour sauce, chili sauce and ginger
  3. sprinkle pork chops with garlic powder and paprika
  4. grill pork chops 8-10 minutes, turning once or twice and brushing with sauce mixture during the last 5 minutes
  5. cook until there is no more pink
  6. heat any remaining sauce to serve with pork chops

Taco Filling – An Easy Crock Pot Recipe

Ingredients:

  • 1 lb. ground beef
  • 1 cup chopped onions
  • 2 – 15 oz. cans chili beans, undrained
  • 15 oz can Mexican corn, undrained
  • 3/4 cup water
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp garlic powder

Directions:

  1. brown ground beef and onions
  2. drain and add to crock pot
  3. add the other ingredients and stir well
  4. cover and cook on low for 6-8 hours

You can serve these with tortillas, hard taco shells or make a taco salad.  Garnish with shredded lettuce, chopped tomatoes, shredded cheese, sour cream and salsa.  Have a fiesta!

 

Strawberry Sugar Cookie Shortcake

This dessert looks so pretty with fresh, red-ripe strawberries!  And it tastes just a good as it looks.  This treat will be a hit with all of your family members.

Strawberry Sugar Cookie Shortcake Recipe

Ingredients:

  • roll of refrigerated sugar cookie dough
  • 2 Tbsp. sugar
  • 1 quart fresh strawberries, sliced
  • 1 box instant vanilla pudding mix
  • 1 cup milk
  • 1 1/2 cups whipped topping

Directions:

  1. heat oven to 350
  2. turn two 9″ round pans upside down and cover the bottoms with tin foil
  3. take the foil off, turn the pans over and line the inside with the foil
  4. cut roll of cookie dough in half
  5. press each half in the pans and spread until evenly covering the bottom
  6. sprinkle 1 Tbsp sugar over each pan of dough
  7. bake for 20 minutes or until light golden brown
  8. let cool on a wire rack for 10 minutes
  9. pull the tin foil out lifting the cookies out and place on rack to cool completely
  10. mix pudding and milk in a bowl – whisk until thick
  11. fold the whipped topping into the pudding
  12. place a cookie layer on a plate, spread half of the pudding, top with half of the strawberries
  13. repeat for another layer

Yummy!

Mint Brownie Sundae – A Treat for Any Occasion!

One of my favorite combinations is mint and chocolate – the colors are great and the taste is out of this world.  Here is an easy recipe to make the is either an extra special dessert or a treat for a celebration within the family.  You can also go wild and add any kind of ice cream your family likes – peppermint, vanilla, strawberry – the possibilities are endless.

Mint Brownie Sundae

Ingredients:

  • fudge brownie mix
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 2 eggs
  • mint chip ice cream – slightly softened
  • chocolate mint candies
  • hot fudge topping

Directions:

  1. heat oven to 350
  2. spray the inside of a 13 x 9 pan with cooking spray
  3. add brownie mix, oil, water and eggs to a bowl
  4. mix well
  5. pour batter into pan
  6. bake 28 – 30 minutes
  7. let brownies cool on a wire rack
  8. when cool, scoop put ice cream and spread on top
  9. place in freezer for at least 8 hours
  10. when ready to serve, cut out square pieces and place on a dish
  11. top with fudge topping and a candy

Taco Dip – A Good Anytime Snack

Ingredients:

  • 1 lb ground beef
  • 1/2 lb Velveeta Cheese
  • half an envelop of taco seasoning mix
  • 12 oz Salsa
  • 8 oz. refried beans

Directions:

  1. brown ground beef
  2. drain and put in crock pot
  3. cut Velveeta cheese into cubes and add to crock pot
  4. add taco seasoning mix and salsa – stir together
  5. add refried beans and ,ix well
  6. cover and cook on low for 1-2 hours
  7. serve with tortilla chips

A great dip for football games, family nights, parties or just for snacking!

 

Sweet Cornbread – A Bread for any Ocassion!

Yummy!  Cornbread is delicious to eat warm from the oven or cold – either way – add some butter and you will eat every crumb.  The sweeter – the better!

 

Sweet Cornbread Recipe

Ingredients:

  • 1 1/3 cup corn meal
  • 2 cups flour
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp salt
  • 1 3/4 plain yogurt
  • 1/2 cup milk
  • 1/4 cup maple syrup or brown sugar
  • 2 eggs
  • 4 Tbsp. melted butter

Directions:

  1. preheat oven to 350
  2. grease a 8″ x 8″ baking pan
  3. sift cornmeal, flour, baking powder, baking soda and salt into a bowl and mix together
  4. in another bowl, whisk together yogurt, milk, maple syrup or brown sugar, eggs and melted butter
  5. add the dry ingredients into the wet ingredients and stir enough to combine
  6. pour into pan
  7. bake for 20-25 minutes or until golden brown

Enjoy with soups, stews, as a side or just by itself!

Tapioca Pudding Recipe – A Fruity Treat

A cold pudding that everyone will love.  Add any type of fruit that is in season or your favorites – so many possibilities!

Tapioca Pudding Recipe

Ingredients:

  • 2 quarts milk
  • 1 cup small pearl tapioca
  • 1 – 1 1/2 cup sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 1 cup grapes, cut in half
  • 1 cup crushed pineapple, drained
  • 1 cup whipped cream

Directions:

  1. whisk the milk, tapioca and sugar together in crock pot
  2. cover and cook on high for 3 hours
  3. in a bowl, beat the eggs and add vanilla
  4. add a little hot milk from the crock pot to the egg mixture and stir well
  5. add egg mixture to crock pot
  6. cover and cook on high for 20 more minutes
  7. chill the tapioca completely
  8. when cooled completely, add grapes, pineapple and whipped cream
  9. stir and serve

Tapioca is gluten-free.

Cheesy Pepperoni Crescent Rolls

Pick your favorite pizza topping sand fill these crescent rolls with them – make them your own creation and eat them up!  Whether you like the meats or veggies or a combination of each – it all is good!

Cheesy Pepperoni Crescent Rolls Recipe

Ingredients:

  • 24 slices of pepperoni
  • 1/2 cup shredded mozzarella cheese
  • 1 8 oz can refrigerated crescent rolls
  • 1 cup pizza sauce

Directions:

  1. heat oven to 375
  2. unroll the rolls into the 8 separate triangles
  3. put 3 pepperoni slices on each
  4. add 1 Tbsp. cheese on top of each
  5. roll up the triangles starting with the shortest side and roll to the opposite point
  6. place on cookie sheet
  7. bake 10-14 minutes or until golden brown

Great for a hot lunch, after school snack or an easy dinner.  No need to call for pizza delivery – you can make your own!

Sweet Peach & Cherry Cream Cakes

This desset recipe is just peachy!  You can use any kind of fruits you like and make it your own special recipe.

Sweet Peach & Cherry Cream Cakes

Ingredients:

  • 2 cups fresh pitted sweet cherries
  • 1 peach peeled and sliced
  • 1/3 cup peach spreadable fruit, melted
  • 3/4 cup peach yogurt
  • 1/4 cup sour cream
  • 8 individual sponge shortcake cups
  • 2 Tbsp. orange juice

Directions:

  1. in a bowl, toss cherries, peach and spreadable fruit to coat
  2. in another bowl, mix yogurt and sour cream
  3. sprinkle shortcake cups with about 1 tsp. orange juisce each
  4. spread 1 – 2 Tbsp. yogurt mixture in each cup
  5. spoon fruit mixture on top

Tired of your basic rolls with dinner?  Try making these Popovers for something different.  They are perfect with anything, anytime and are easy to maker.  Your kids will get a thrill watching them bake as they rise up high in their cups.

Ingredients:

  • 3 eggs
  • 1 cup milk
  • 1 cup all purpose flour
  • 1/2 teaspoon salt

Directions:

  1. preheat oven to 400 and put rack in the middle of the overn
  2. grease popover pan or oven proof baking cups that are on a baking sheet
  3. in a bowl, beat eggs until frothy
  4. add milk and stir together
  5. using a fork, add flour and salt mixing just enough so batter is smooth and well blended
  6. fill ups half full
  7. bake for 30 minutes

Serve warm with butter and jam – its a good thing!
