Biscuit Bites – Perfect Morning Munchies!

Got the morning munchies?  Here is a great recipe to help satisfy those cravings.

Biscuit Bites

Ingredients:

  • 2 tbsp sugar
  • 1/2 tsp ground cinnamon
  • 1 can refrigerated large buttermilk biscuits
  • 2 Tbsp butter
  •  3/4 cup finely crushed Cinnamon Toast cereal

Directions:

  1. heat oven to 400
  2. spray cookie sheet with cooking spray
  3. cut each biscuit into 6 eaual wedges
  4. mix sugar and cinnamon in a bowl
  5. put wedges in mixture an stir until coated
  6. melt butter
  7. drizzle butter over wedges and stir to coat
  8. add crushed cereal and stir to coat
  9. place wedges on cookie sheet
  10. bake 13 minutes or until golden brown

Cheese Dip with Broccoli

Here is an easy dip that is quick to whip up in case of unexpected guests, a case of the munchies or just an everyday snack.  Cheese ans broccoli make a great combination and it is the only way I can get my kids to eat broccoli – so it is a good thing.  I use cheddar cheese, but you can use swiss cheese or whatever type of cheese your family enjoys.

Cheesy Broccoli Dip

Ingredients:

  • red pepper, chopped
  • 2 cups frozen chopped broccoli, thawed
  • 2 – 8 oz ranch dip
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded cheddar cheese

Directions:

  1. add all ingredients to your crock pot
  2. cover
  3. cook on low for 1 hour
  4. serve with chips, crackers or raw veggies

Mexican Snack Mix

A quick and easy snack mix you can make for your family, friends and kids.  Great to have around for munchies!

Mexican Snack Mix

Ingredients:

  • 3 cups bite size baked cheese crakcers
  • 2 cups twisted butter flavored pretzel sticks
  • 1 cup salted peanuts
  • 1 Tbsp. vegetable oil
  • 2 Tbsp. taco seasoning dry mix

Directions:

  1. add crackers, peanuts and pretzels in a bowl – toss together
  2. drizzle oil over top and stir
  3. sprinkle taco seasoning over the top and stir gently
  4. microwave on high for 2 minutes
  5. sitr
  6. microwave for another 2 minutes
  7. let cool before eating

Coconut Cookies

Ingredients:

  • 1 stick butter
  • 1 Tbsp syrup
  • 1 Tbsp boiling water
  • 1 tsp baking soda
  • 1 1/2 cups rolled oats
  • 1 cup flour
  • 1/2 cup shreddee coconut
  • 1/2 cup brown sugar

Directions:

  1. preheat oven to 325
  2. grease baking sheets
  3. heat butter and syrup in a sauce pan
  4. put boiling water in small bowl and add bkang soda – stir – add to sauce pan
  5. place all ingredients in a bowl and mix well
  6. put small teaspoonfuls of the mixture on bakng sheets
  7. bake for 15 minutes or until golden brown
  8.  

 

 

Gooey Peanut Butter Cookies- Finger Licking Good!

If your kids like cookies with a crispy outside and a fudgy center, then this is a great recipe to try.

Peanut Butter Cookie Recipe

Ingredients:

  • 1/2 cup butter
  • 6 Tbsp peanut butter
  • 1/2 cup plus 2 Tbsp light brown sugar
  • 1 egg
  • 1 3/4 cup flour
  • 1/4 tsp baking  powder
  • 1/4 tsp baking soda

Directions:

  1. preheat oven to 375
  2. mix butter, peanut butter and sugar in a bowl
  3. add egg and mix well
  4. sift the flour, soda and powder together
  5. add to mixture and stir well
  6. place heaping teaspoonfuls of the mixture onto baking sheets, leaving space between
  7. bake for 12-15 minutes or until ifht golden brown
  8. cool on a rack

Asian Chicken Salad Recipe – A Perfect Mommy Lunch

If you like salads, here is a recipe that is just yummy!  Your kids may even like it too!

Asian Chicken Salad Recipe

Ingredients:

  • 1 lb uncooked chicken breast strips
  • 3/4 cup Oriental dressing and marinade
  • 2 tsp vegetable oil
  • 3 cups thinly sliced Chinese cabbage
  • 3 cups fresh baby spinach
  • 1/4 cup sliced green onions
  • 2 Tbsp coarsely chopped dry roasted peanuts

Diresctions:

  1. mix chicken and 1/4 cup dressing ina bowl
  2. let stand for 10 minutes
  3. heat oil in a skillet to a medium high heat
  4. cook chicken until browned and no longer pink
  5. remove from heat
  6. add remaining dressing and stir
  7. to make salad, first put the cabbage and spinach on plate, top with chicken and the sprinkle the onions and peanuts on top

You can substitute different types of lettuce or cabbage if you prefer.

Glazed Chicken Breast Recipe

Glazed Chicken Recipe

Ingredients:

  • 1/3 cup brown sugar
  • 1/3 cup balsamic vinegar
  • 1 tsp fresh rosemary leaves, chopped
  • 1 tsp garlic finely chopped
  • 4 chicken breasts
  • salt
  • pepper

Directions:

  1. mix together brown sugar, vinegar, rosemary and garlic in a bowl
  2. heat grill
  3. sprinkle chicken with salt and pepper
  4. place on grill,
  5. cover and cook for 10 minutes
  6. turn and brush half of the glaze on the chicken
  7. continue to cook for another 10 minutes
  8. keep brushing the glaze on the chicken
  9. chicken is done when the juice is clear and the internal temperature is 170

You can make this with boneless or bone-in chicken breasts, whichever you prefer.  If you get breast with the skin on, cook the skin side first and then the glaze goes on the meat side.  You can also add any type of fresh herbs that you prefer the taste of.

Blueberry Cookies

Blueberries are a wonderful fruit to add to your diet – they contain lots of good things for us.  Have you ever thought of making blueberry cookies?  These will delight your kids as the are soft and filled with yummy blueberries.

Bluebrry Cookies

Ingredients:

  • 6 Tbsp. butter
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cup flour
  • grated rind of unwaxed lemon
  • 3/4 cup blueberries

Directions:

  1. preheat oven to 350
  2. line baking sheets with parchment paper
  3. beat butter and sugar together until creamy
  4. add egg and vanilla and mix well
  5. sift flour
  6. add flour and lemon peel to mixture and mix well
  7. drop teaspoon full of batter on baking sheet several inches apart
  8. bake 12-15 minutes or until a light golden color
  9. let cool on a wire rake

Chicken & Broccoli Parmesan Pasta

Hide the broccoli with other yummy ingredients and your kids won’t even know that they are eating a healthy vegetable. 

Chicken & Broccoli Parmesan Pasta

Ingredients:

  • 8 oz uncooked penne pasta
  • 2 cups broccoli florets
  • 1 lb boneless and skinless chicken breast
  • 1 tsp adobo seasoning
  • 2 Tbsp. olive oil
  • 1 clove garlic minced
  • 1/4 cup mayonnaise
  • 1/8 tsp black pepper
  • 2 Tbsp. Parmesan Cheese

Directions:

  1. cook pasta per directions on box, adding broccoli the last 5 minutes of cooking time
  2. drain and put back in pot
  3. cut chicken into bite size pieces and place in bowl
  4. add adobo and toss to coat
  5. heat oil in a skillet
  6. add garlic and cook for 30 seconds
  7. add chicken and cook until no pink
  8. add chicken to pasta & broccoli
  9. stir in mayonnaise and pepper
  10. cook over low heat until heated throughout
  11. sprinkle with Parmesan Cheese when served

This recipe is quick and easy and doesn’t need much else to go with it.  The green of the broccoli adds a touch of color to the meal.  My kids love this and eat it without picking out the broccoli – hopefully your family will enjoy it as much as ours.

Ham & Potato Chowder Recipe

Here is a recipe for a great chunky soup that sticks to your ribs and warms you from the inside out.  Great for lunch or dinner, it is very satisfying and doesn’t need much to be served with it.

Ham & Potato Chowder

Ingredients:

  • 1 cup chopped celery
  • 1/3 cup chopped onion
  • 1/4 lb cooked ham, sliced in strips
  • 5 oz package scalloped potatoes and sauce packet
  • 4 cups chicken broth
  • salt
  • pepper
  • 2 cups half and half
  • 1/3 cup flour

Directions:

  1. add celery, onions, ham, scalloped potatoes mix and chicken broth to crock pot
  2. add salt and pepper to taste
  3. stir well
  4. cover and cook on low for 7 hours
  5. whisk together half and half with flour
  6. add to crock pot after the initial 7 hours of cook time
  7. mix well
  8. cover and cook on low for another hour, stirring occasionally

Add oyster crackers for your kids  – they are always good soaked in any kind of chowder.  Enjoy!
