Strawberry Sugar Cookie Shortcake

This dessert looks so pretty with fresh, red-ripe strawberries!  And it tastes just a good as it looks.  This treat will be a hit with all of your family members.

Strawberry Sugar Cookie Shortcake Recipe

Ingredients:

  • roll of refrigerated sugar cookie dough
  • 2 Tbsp. sugar
  • 1 quart fresh strawberries, sliced
  • 1 box instant vanilla pudding mix
  • 1 cup milk
  • 1 1/2 cups whipped topping

Directions:

  1. heat oven to 350
  2. turn two 9″ round pans upside down and cover the bottoms with tin foil
  3. take the foil off, turn the pans over and line the inside with the foil
  4. cut roll of cookie dough in half
  5. press each half in the pans and spread until evenly covering the bottom
  6. sprinkle 1 Tbsp sugar over each pan of dough
  7. bake for 20 minutes or until light golden brown
  8. let cool on a wire rack for 10 minutes
  9. pull the tin foil out lifting the cookies out and place on rack to cool completely
  10. mix pudding and milk in a bowl – whisk until thick
  11. fold the whipped topping into the pudding
  12. place a cookie layer on a plate, spread half of the pudding, top with half of the strawberries
  13. repeat for another layer

Ooey Gooey Chocolate Pudding Cake – An Easy Crock Pot Recipe

This is a sweet chocolate dessert that is sure to be a favorite of kids young and old!  A birthday dessert, an anytime treat or just for the fun of it – it will be gobbled up in now time at all!

Ingredients:

  • 1 cup dry all purpose baking mix
  • 1 cup sugar
  • 3 Tbsp. unsweetened cocoa powder
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1 2/3 cup hot water

Directions:

  1. spray the inside of the crock pot with cooking spray
  2. in a bowl, mix together 1/2 cup sugar, 3 Tbsp. cocoa powder, milk and vanilla
  3. spoon batter into crock pot and spread evenly
  4. in another bowl, mix together 1/2 cup sugar, 1/3 cup cocoa powder and hot water
  5. carefully pour this over the batter and do not stir
  6. cover crock pot
  7. cook on high for 2-3 hours
  8. after 2 hours, stick a toothpick into the center – if it comes out wet, it needs to cook more – if it comes out with some dry crumbs on it, then it is done
  9. if it needs to cook more, continue to test with toothpick every 15 minutes
  10. NOTE:  the batter will rise to the top and turn into cake, underneath will be a rich chocolate pudding
  11. when serving, scoop all the way down to get both cake and pudding
  12. serve with ice cream or whipped cream

This will be a dessert that everyone will have a hard time waiting for – but it will be worth the wait.  Warm chocolate and cold vanilla ice cream is the best comfort food around!

Baked Apple Dessert – A Warm & Delicious Treat

A quick and easy treat to make your kids when they are whining “I’m hungry!”  Made with apples which are a good source of vitamins A and C.

BAKED APPLE DESSERT

Ingredients:

  • 1 large apple
  • 1 T. raisins or dried cranberries
  • 1 T brown sugar
  • 2 t. butter, softened
  • 1/2 cup granola

Directions:

  1. cut apple in half lengthwise
  2. with spoon, remove apple core
  3. place each half in a small microwaveable bowl
  4. fill the indent of each apple with raisins and brown sugar, then dot with the butter
  5. cover each with microwaveable plastic wrap, leaving a small opening for venting
  6. microwave each apple half on high for 2 to 3 minutes
  7. top with granola
  8. OPTIONAL:  serve with a little milk, cream or yogurt

Perfect for the cold winter months.
