Homemade Ice Cream Sandwiches

I scream, you scream, we all scream for ice cream!  Have lots of fun making these homemade ice cream sandwiches and even more fun eating them.  What a wonderful activity for your kids and a special treat for an afternoon snack.

Homemade Ice Cream Sandwiches

Ingredients:

  • 1 Tbsp. soft butter
  • 3/4 cup butter
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cup flour
  • pinch of salt
  • 1 quart chocolate chip ice cream, softened

Directions:

  • preheat oven to 350
  • line bottom and sides of 9" x 13" pan with aluminum foil
  • lightly grease foil with soft butter
  • melt 3/4 cup butter in pan over medium heat
  • remove from heat
  • add cocoa powder and whisk until smooth
  • add sugar and whisk together
  • let cool for 2 minutes
  • spread evenly in pan
  • bake about 20 minutes or until a toothpick comes out clean
  • let cool completely
  • lift from pan and remove foil
  • cut into desired sizes
  • spread ice cream about 1 inch thick on a piece and top with another piece
  • press gently
  • wrap in foil
  • freeze until hard

You can substitute your favorite ice cream flavor.
