Posted by the folks at Cow & Lizard on Dec 2nd 2015

My kids love to help me in the kitchen.  Whether is is cooking or baking, they have always enjoyed preparing new recipes.  And of course, they look forward to trying their creations.  Here is a recipe for a Fresh Tomato Sauce that can be used for pizza sauce or just simply on a plate of pasta.

FRESH TOMATO SAUCE

Ingredients:

  • 6 large ripe tomatoes
  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 2 clove garlic, finely chopped
  • 8 fresh basil leaves, chopped
  • 1 1/2 tsp salt
  • 1/4 tsp. pepper

Directions:

  • cut stem end out of tomato, cut tomato in half, squeeze tomato half into a bowl, scoop out seeds & throw away, chop rest of tomato and add to bowl
  • heat olive oil in a frying pan, add onions, cook until soft, add garlic and cook for one minute
  • add chopped tomatoes and juices, simmer over medium heat until it has reduced and thickened - about 20 minutes
  • remove from heat
  • add basil, salt and pepper
  • stir together and serve up
